O2 Fitness Recipe: Kale Chips

Like almost everyone I have days where my will power is stronger than others, especially now with school having started back I find myself at home sitting and studying with my pantry and refrigerator just a few steps away. Finding snacks that are actually healthy, not processed, and taste good are hard to find....So, in an effort to help myself control and still satisfy my cravings for something crunchy I tried kale chips!

I've combined a few different techniques from other recipes and this is what I've enjoyed the most:

Ingredients:

  • Curly Kale (any kale)
  • Extra Virgin Olive Oil
  • Salt and Pepper

Directions:

  1. Turn on oven to 350 F
  2. Rip off the leaves of the kale from the stem. I don't cut the kale, I just rip the leaves up to whatever size I feel like. Don't forget to wash and dry the kale.
  3. Then in a bowl I toss the kale with just a little more than table spoon of the extra virgin olive oil and some salt and pepper.
  4. Lay out on a cooking sheet and bake for about 12 or so minutes (don't let them burn) but they should be crispy.
  5. Finally, serve and eat immediately!!

I've added garlic before, but you could also make them a little bit spicy and add chili powder; experimentation is always encouraged. Happy snacking!
